Corn, Scotch Bonnet and blackbean salsa.

I made a bash at what I thought taco mazama's hottest (not really) salsa was. It turned out splendidly and was very similar to theirs.

Ingredients
1 can of sweetcorn, drained
1 can of black beans (pinto or black eyed will also do), rinsed and drained
2 small tomatoes, seeded and chopped finely
1 medium red or white onion, chopped finely
Handful chopped oregano. Or heaped teaspoon of dried stuff
2 scotch bonnets, seeded and chopped
Juice of a lime plus a dash of white wine vinegar
Pinch or two of salt and some ground black pepper

Makes a big healthy bowlful. Yum!
